These Parmesan Thyme Roasted Potatoes are side dish perfection! They’re fluffy in the middle, crispy on the outside, and flavored with a delicious combination of parmesan, lemon, garlic, and fresh thyme.

The idea for these Parmesan Thyme Roasted Potatoes came to me on a whim. I was making another roasted potato recipe and realized I had purchased too many potatoes. I knew if I left them in my pantry, I’d forget about them and they would start to sprout. So, I grabbed what I had on hand and whipped up this deliciously crispy roasted potato recipe.

And boy am I glad I purchased too many potatoes! These potato wedges are tossed in a blend of olive oil, lemon juice, fresh thyme, parmesan, and garlic, then roasted for about 45 minutes.

The flavor is amazing, the texture is perfect, and they make the perfect side dish for any meal!

  • Potatoes: I like to use white potatoes for this recipe, but feel free to use another variety if preferred. Keep in mind that different types of potatoes will have slightly different textures.
  • Parmesan: I recommend freshly grated parmesan cheese for the best texture and flavor! If all you have is pre-grated, that will work too.
  • Garlic: There’s nothing as good as freshly minced garlic to add delicious savory flavor to roasted potatoes.
  • Olive Oil: Coating the potatoes in olive oil helps them get nice and crispy on the outside.
  • Lemon Juice: A splash of lemon juice adds a bright, zesty flavor to the salty, savory potatoes.
  • Fresh Thyme: Fresh thyme leaves add a savory, but slightly sweet flavor.

  • Step One: Preheat oven to 325°F.
  • Step Two: Spread potatoes in a greased 9×13 inch pan.
  • Step Three: In a bowl, whisk together the remaining ingredients. Pour over potatoes.
  • Step Four: Bake for 45 minutes, turning a couple times during the cooking process. Serve hot.

Recipe Tips and Tricks

  • Cut the potatoes evenly. When you’re slicing the potatoes into wedges, aim at making them all relatively similar in size. That way they cook at the same rate!
  • Grease the baking dish. This helps prevent the potatoes from burning or sticking on the bottom of the pan.
  • Rotate the potatoes a couple of times during roasting. Throughout the 45 minutes cooking time, I recommend turning the potatoes a couple of times to make sure they’re cooked evenly. We want that heat to reach all sides for an even, crispy texture.
  • Cooking times may vary. All ovens are different, so your baking time might not be exactly 45 minutes. Simply roast the potatoes until they’re crisped and fork-tender.
  • If you don’t have fresh thyme, you can swap it out for ½ teaspoon of dried thyme instead.

Variations and Substitutions

  • Try another potato shape. The wedges are delicious, but you could totally dice the potatoes if that’s what you prefer. This may affect the baking time, so check early, then add time as needed.
  • Spice them up. Give your roasted potatoes a little bit of heat with paprika, cayenne pepper, or red pepper flakes.
  • Make them cheesier. I love the light, salty flavor that parmesan adds, but if you want to make your potatoes even cheeser try topping them off with grated cheddar or mozzarella.

Storage Instructions

Roasted potatoes are best served right away, but leftovers can be stored in an airtight container in the fridge for up to 4 days.

To reheat, spread them out onto a baking sheet and bake at 350ºF until heated through.

Can these be frozen?

No, I don’t recommend freezing these potatoes. The texture of potatoes doesn’t hold up well when thawed.

Should You Always Boil Potatoes Before Roasting?

Not necessarily. Some recipes call for you to soak the potatoes before roasting them to help get rid of excess starch and create a crispier texture. However, I don’t find it necessary for this recipe. The exterior gets deliciously crispy in the oven without the added step!

How Do You Make Roast Potatoes Really Crispy?

There are a couple of keys to the perfect crispy roasted potato texture:

  • Preheat the oven. The oven should be nice and toasty before you add the potatoes in for the best texture.
  • Coat the potatoes in oil. The high smoke point of oil allows the exterior of the potato wedges to get crispy without burning.
  • Serve right away. The longer the potatoes sit, the more they will lose their crisp. These are best served hot and fresh out of the oven!
