Ingredients you need for the Spicy Tahini Tofu Stir Fry

1 package extra firm tofu, drained, pressed at least 15 minutes, cut into 1 inch cubes2 tablespoons sesame oil1/4 cup tahini2 tablespoons sriracha sauce (or your favorite hot sauce)1 tablespoon soy sauce1 tablespoon honey1 teaspoon rice wine vinegar2 garlic cloves, minced1/2 tablespoon freshly grated ginger3 to 4 tablespoons water2 – 3 cups cooked rice noodles2 tablespoons chopped scallions greens1 tablespoon toasted sesame seeds + poppy seeds

Directions

1.To make the tahini tofu stir-fry: Heat sesame oil in a skillet over medium heat. Cook tofu on an even layer for about 10 minutes, flipping once or twice, until the tofu isbrowned and crisp on all sides.

2.Meanwhile, whisk the tahini, sriracha, soy sauce, honey, vinegar, garlic and grated ginger in a small bowl. Add 3tablespoons of water to thin out the sauce.

3. Once tofu cubes are browned, lower the heat to low and pour the tahini sauce over the tofu, stirring gentlyto coat the tofu. Cook just until the sauce is hot and startsto bubble, about 1 minute. Don’t overcook or the sauce will be too thick.

4. Divide the tahini tofu stir-fry onto plates and serve with rice noodles and a side of baby spinach salad (or chopped bok-choi, shredded kale, as you want), and sprinklewith sesame and poppy seeds and chopped scallions.Enjoy! ❤️

Here’s a quick overview of the principal food categories that constitute a plant-based diet:

  • Fruits:any type of fruit including bananas, melons, strawberries, raspberries, apples, lemons, oranges.
  • Root vegetables:such as potatoes, beets, carrots, parsnips, sweet potatoes, celeriac.
  • Vegetables:peppers, corn, green beans, avocados, lettuce, onion, spinach, cabbage, kale, peas, collard greens, garlic, leeks, all leafy green vegetables.
  • Legumes:beans of any kind (chickpeas, black beans…), plus lentils, pulses, and similar ingredients.
  • Whole grains:cereals, grains, and other starchy food ingredients. Examples are quinoa, brown rice, millet, whole wheat, oats, barley.

As a general rule, a whole food plant-based diet means eating whole, unrefined or minimally processed plant foods. And these recipes above are always a good starting point!
